What it’s like to dine on one of Sydney most exclusive spueryachts

When you think of a luxury fine dining with water views, it’s probably one of the exclusive restaurants dotting the Sydney Harbour foreshore that comes to mind. But what if you could have that exquisite meal while ON a boat in the harbour? And not just any boat – an Italian-built, Alloy superyacht.

The Infinity Pacific is the newest superyacht to be available for charter on Sydney Harbour and is one of few that has the option of sit-down dining or a canape selection. Up to 20 people can enjoy a meal that might include Wagyu bresaola, bitter greens, rosemary olive dressing and shaved parmesan for entrée, a Sri Lankan snapper curry with confit tomatoes, basmati rice, tamarind chutney for mains, and a delectable vanilla bean pannacotta with passionfruit, confit pineapple and shaved coconut for dessert.

The meals are all curated by Noosa Beach House executive chef Peter Kuruvita and focus on his unique Sri Lankan cooking style and love of seafood. If you’d like to invite more friends on board, there is a buffet option for up to 30 guests, and up to 50 people can be catered for with a variety of canape menus. Options include grilled Queensland king prawns dipped in aioli and dusted with popcorn, sumac and parsley, and tasting plates such as slow-braised beef daube with chargrilled carrots and Gremolata. You can choose to dine in the light, modern living area which is designed by Parisian interior architect Fréderic Méchiche and Luca Dini, or head up to the upper deck where you can take in the water views. A crew of eight ensures every detail is taken care of.

According to co-founder and owner Greg Karedis, no other hotel group owns a superyacht on Sydney Harbour. “It’s by far the most exclusive superyacht experience on Sydney Harbour,” he says. The superyacht is available for a minimum of four hours on Sydney Harbour or can be chartered for extended periods, cruising to destinations such as Pittwater, Gold Coast, Great

Barrier Reef or even longer voyages between Australia, the South Pacific and New Zealand.
